    The cold weather makes me want soup, so I’m making some Curried Cauliflower Soup. Its delicious!
    Ingredients:
    1 onion, diced
    1 tbs oil
    1 garlic clove, finely chopped
    1 tsp ground turmeric
    1 tbs ground cummin
    1 tbs ground paprika
    1/2 medium cauliflower
    4 cups vegetable stock
    Salt and pepper to taste

    Instructions:
    Fry onion and garlic in a laarge pan with oil on medium heat until slightly browned.
    Add cauliflower, turneric. cummin and coriander and stir for 2 minutes.
    Add stock and simmer for 10-15 minutes or until cauliflower has softened.
    Place in a food processor or use an electric blender to form a smooth texture (I use the food processor for this one, my blender has trouble with the volume).
    Heat before serving.

    Paleo Muffins
    (mostly)
    Ingredients
    1/2 cup Almonds
    1/2 cup Pecans (or you can just use 1 cup of Almonds and not use Pecans)
    2 cups Protein Powder (unsweetened, no flavor)
    1/2 tsp Baking Powder (I know it’s not exactly Paleo, but all it really has is a little bit of sodium, don’t worry about it)
    1 tbsp Raw Honey
    2 Eggs
    3/4 Cup Almond Butter
    1/4 Coconut Oil
    1 Cup Dried Fruit (we used Blueberries and Cranberries)
    2 1/2 tbsp Water
    Steps
    Place the Almonds in a food processor and chop them up a bit, not too small. Take the chopped Almonds and Pecans and roast them in the oven for a bit. You can place them on a pan or wrap them up in foil. Takes about 10 minutes at 450 degrees. Shake them up or flip them half-way through.
    Once roasted, place the nuts in the food processor and grind them down until they are fairly fine. Now you have Almond/Pecan Meal.
    Mix the Meal, the Protein Powder, and the Baking Powder in a mixing bowl.
    Place the Almond Butter and Coconut Oil in a microwave-safe bowl and nuke it for about a minute. This will melt the Coconut Oil and Almond Butter.
    Pour the rest of the ingredients into the mixing bowl and mix everything together. Be sure to get the Eggs all mixed up. You want the batter to be moist all over.
    Place batter in some sort of baking pan. You can go about this a couple ways. You could use just a cake pan and cut out the servings yourself or do what we did and use a 24-count mini-muffin pan. Here’s the one I used.
    Bake for 10-13 minutes at 350 degrees. Be careful not to over cook it. Past 15 minutes, and they will still taste good but be kind of dry.

    Thanks! I found a few online but the almond meal to water ratios seem to vary a lot, so its hard to figure out what will be good and give a more “pancake like” result.
